My husband and I both enjoyed it. and added a couple tsp of white wine vinegar. I used 14oz can crushed tomatoes instead of rotel and tomato sauce, added small can of diced green chiles, and one deseeded jalapeno, topped with plain nonfat Greek yogurt, avocado, and hot sauce. It is also great with butternut squash instead of sweet potatoes! I surely will be making again but doubling since I would want leftovers. I added a can of black beans. Also sauteed green, red, yellow peppers and jalapeno and serano peppers for added color/flavor. This Whole30 chili friendly recipe has just the right amount of spice to compliment the sweet potatoes without being too spicy for those of you who prefer a milder chili (you can of course bump up the heat if you wish). The colors in this stew are beautiful and vibrant and totally inviting. The next time I make it, I will swap out chickpeas and add kidney beans. Just curious.
